A-maaaaaazing Dish

Courgetti Spaghetti

350g courgette ribbons (noodles)

100gr (1) finely chopped onion

100gr (1) yellow or red pepper (diced)

1 segment of garlic (finely chopped)

180gr (8) mushrooms (chopped in chunks)

4 cups (120gr) baby spinach

60gr Simonsberg Reduced Fat Feta

100gr cherry tomatoes

1 Tin of whole tomatoes (blended into a pulp)

1 Tbsp smoked/regular paprika

Handful of fresh thyme

  • Stir fry the onions for 2mins. Use a non stick pan with a light coating of spray and cook

  • Now add garlic and peppers and fry for 2-3min

  • Add the blended tomatoes and paprika & stir

  • Add mushrooms & simmer for 2 minutes

  • Now add courgettes & spinach and cook for 5 minutes

  • Turn off the heat and add the feta and cherry tomatoes and stir

  • Leave lid on for 2 mins and serve

Makes enough for 3 or 4 portions.

So divide into 4 and have for lunch

or supper again.
